Freshly emptied 225 l barrels (French oak) from a 4 year old red Marsala from Sicily.
Marsala is a Sicillian sweet wine with a D.O.C. status. The wine was named after the seaport Marsala. The name originates from the Arabic words “Marsa allah” and means “port of god”.
Originally the Marsala was mae only in the province Trapani. By now it’s allowed to be made in the provinces Palermo and Agrigirnt. Discovered was the wine from a son of an English merchant. He realized the potential of the sweet wine to compete with Madeira and Sherry. That’s the reason why he started to import Marsala to England in 1773.
The rare red Marsala is made of Nerello Mascalese, Nero d’Avola and Perricone. During maturing they add brandy or thickened grape juice and it is blended with older Marsala. After that the wine is stored for 10 Years in oak barrel aging only.
The intense ruby red colour and the persistent aromas of Marsalas make these barrels ideal for distillate ageing.

Already for 20 years these barrels are in use, the last 10 years of aging of liqueur wine from Muscatel (type Roxo & Branco). The barrels were used for aging under the care of Companhia Agrícola do Sanguinhal in the Óbidos region. The high sugar content of 38 g/l shows a clear direction. Not only does sugar act as a natural flavor enhancer, but in the form of these pre-used barrels, it brings an exciting aroma structure and thus basis for your distillate. source in bulk from Portugal.Moscatel is the sweetest sherry grape
and the type that is drunk and enjoyed as a dessert wine. With a sugar
content of almost 500 g per liter of must remaining after the grapes
have been dried, this wine is pressed as a raisin. Moscatel or in German
Muscatel or Muskateller is considered one of the oldest grape varieties

These port wine barrels from Portugal, or to be more precise precisely from the Duoro Valley, offer an explosion of flavours. The barrels were used for Lagrima - the white port wine. With a high residual sugar content of up to 140 g/l, the full glory of the sweet fruit unfolds. The white grapes are macerated in the old port wine tradition.
The aroma is anything but flat, instead it is composed of different notes: the golden wine brings an opulence of deep floral rose notes, delicate wood, light toffee, a hint of honey honey, rounded off with a very subtle salty taste on the palate.
As your product matures within the white port wine barrel, the developing structure attains more complex depths that are interesting and extravagant at the same time.

Sherry casks that have been filled for up to 12 months in our wooden cask warehouses with selected Cream qualities, which we source loose from Jerez.
Cream is a blend of Oloroso and Pedro Ximenez and offers a even-tempered sweetness and balance.
The 125 l barrels were rebuilt in advance by our coopers from original freshly emptied bourbon barrels, this is creating a balanced aroma profile between former bourbon pre-filling and the subsequent maturation with sherry.

Based on the specific manufacturing method the Sherry develops a flavour rich of almonds and yeast, occasionally also reminding of hazelnut and walnut which is exclusively peculiar for this wine.The most characteristic for Sherries is that they are firstly produced from a dry white wine. This wine is treated with brandy after the agitation being completed and thus increased from originally 11 to 12 to 15 to 19.9 alcohol percentage. After that it ripens in unclosed 500 l wood barrels. In order to sweet the Sherries Muscatel or Pedro Ximenez wines will be added before the filling. The grapes of this varietal are not immediately pressed after the harvest but first dried. The juice of these grapes is very concentrated and the yeast does not turn all sugar into alcohol. During the Sherry manufacturing process exclusively Palomino, Moscatel and Pedro Ximenez can be used, other grape varieties are only cultivated for table wine and ordinary table wine production in the province of Cádiz. Sherry is blended from wines of different years during its barrel ripening process. Oloroso is produced without bloom layer by oxidation and is darker and stronger in its flavour and in principle rather dry, with amber until mahogany colour and a nice nut flavour (oloroso). The alcohol level of an Oloroso amounts to 17 to 20 % vol.
