They are made from Ash wood (Fraxinus excelsior), an old wood type for barrel-making. The barrels are for aging of distillates, such as grain and fruit spirits, but without release some of its color. This wood ensures a balanced maturation through a restrained micro-oxygenation without colorants.The spirit ages in the pureness of its nature and the taste is pleasantly soft. Barrel from mulberrywood 3 l - 112 l
Liter: 3 l
Barrels from mulberrywood are excellent for aging plum or other stone fruits. A very golden colour and sweet flavours are characteristics after aging. Recommended also for pomace or grappa. Mulberry wood, one high-aromatic wood combined with a high color yield during the maturation in the barrel. Originally this wood has been produced from excellent wine barrels and it presents a special freshness and a flavor of fruits for weeks during the summer. Mulberry wood is well-suited for aging of the plum distillate or some other stone fruits. It provides a deep golden-brown color and a sweet aroma during the maturation. It is also ideal for aging of Grappa. The fantastic results are meanwhile being clearly different from cider brandy of stylistic Calvados. In contrast to our other wooden aging barrels, these mulberry barrels have been lacquered with a certified, breathable clear coat which supports the tightness of the mulberry barrel, which is not at all easy due to its characteristics. Cherry barrel 20 l - 110 l
Made of wild cherry wood - Peunus Avium. Barrels equipped with galvanized hoops. Toasting light. Cherry is still the distiller’s most favorable taste. And that not only because of the fruit’s fertility but also because it is an inherent part of the culinary culture of Southern Germany and Switzerland. Since 150 years, the particular climatic conditions there and the soil conditions that the cherry trees need to enforce the fruit’s most aromatic evolvement have been and are still appreciated. The sweet cherry has not for nothing been named tree of the year 2010. It is a stone fruit and belongs to the rose family. The “kirsch” is characterized by its complex taste that takes long at its end as well as the decent and subtle flavor. Initiates describe the favor during tastings often as fleshy, fruity, chocolate, sourly aromatic, juicy, lusty or nuttily aromatic. The most crucial point for the distillers is, however, also the question if “stonetone”, i. e. an almond or marchpane flavor is desired. The question if this flavor or homogenous kirsch with a discrete fruit nature should be pursued is highly discussed. Thankfully one should say. Cause: As is generally known, tastes are different. Note:Cherry wood in the area of distillate is not always easy to process, this requires the growth forms of the cherry tree. We produce the chestnut barrels by ourselves under our own brand Eder - FassStolz®. Our chestnuts - one of the most valuable chestnut stews in Germany come from the region of Wasgau / Trifels. Chestnut wood was already used in the 18th century for the storage of wines. It is characterized by a fine natural sweetness, pronounces the fruit body of the wine and controls little tannin to the wine. In the distillate sector chestnut wood is now particularly popular for apple distillates but also cherrybrandy and "harder" brandies such as Korn. The barrels are toasted inside (over chestnut wood fire) and left outside raw. The bung stave is made of oak to ensure stability. An oval-shaped barrel is different and therefore eye-catching.  So, by using such a barrel shape, both the product itself and its entire aging process become a focal point.  Generally, oval barrels are thought of as being larger, but the smaller, though still well designed, barrels are perfect and highly recommended for the aging of fruit brandies, for example.  The barrels, with a volume of approximately 50 litres, are made from closed grain oak and thereby retain a high degree of impermability – even at high alcohol strengths. For immediate use in your distillery, the barrels include a wooden bung and a matching wooden stand. Distillate barrel acacia 3 l - 112 l
These acacia barrels are ideal for use as distillate barrels because the interior of this acacia barrel is raw – for better breathing and aging. The Robinia (acacia) offered by us as a barrel also comes from sustainable forestry from the Palatinate Forest, here from the Bürgerwald in Annweiler! The exterior of this acacia barrel has been toasted lightly. All of these barrels are equipped with galvanized hoops.  The acacia barrels from small barrel series have been toasted lightly; the high toasted acacia barrels provide a strong punch with significant effects on whisky or Kornbrand etc. The acacia barrels do not color as strongly as oak barrels or mulberry barrels, they hardly give cis-lactone and therefore they are suitable for pure maturation of many fruit spirits, such as elegant grape marc spirit.   Please note, the content indicated for wooden casks do not correspond with net capacity. Distillate barrel Tokaj Oak 56 l and 112 l

This is a new series of barrels which are made of Tokaj oak. The oak grows on volcanic soil in an Hungarian area named Tokaj.  The barrels are produced in the city Erdöbénye in a traditionally cooperage near the Slovakian border. The trees grew very slowly and have fine pores similiar to the German oak. It is an ideal barrel for maturing distillates (especially Rum, Whisky and distillates made of stone fruits) with a medium toast. It offers a nice golden yellow color and flavors like roasted bread and dried plum. It yields a nice balance between sweetness and spiciness and has less tannins than the Limousin oak. A hybrid barrel made of American and German oak. EDER - FassStolz® 110 l - Cigar cask
These barrels were built in the characteristic cigar shape to achieve a faster and more effective maturing. The barrels are available in German (brings spice and emphasizes the fruit) or American oak (brings vanilla and increases the mouthfeel). Due to the elongated design with the same volume, the inner surface is larger than that of a 110 l barrel of the classic design. This larger surface serves both for micro-oxygenation and the release of wood aromas. Several tests and tastings have shown a more balanced, harmonious result. Due to their design, the relatively small barrel heads are, like the staves of the barrel, also treated with medium toast (Fine tannic structures, toasted bread, vanilla, light caramel).  The barrel is equipped with a silicone bung as standard. Private Barrel-Aging-Set
Your own little distillate barrel - Create your own personal favorite distillate!You will receive the barrel incl. accessories delivered to your home and you are responsible for the filling, storage and care. How long your distillate will mature in the barrel is up to you. Create your own distillate according to your taste. The barrel aging set consists of:- 3 liter distillate barrel made from fine-grained German oak, lightly toasted- Barrel rack- Glass funnel Ø 100 mm- Alcoholometer incl. glass measuring cylinder- One Glass sample lifter (in different colours, view pictures)  Before filling the barrel, please noteWe supply you with a high quality oak barrel made of fine German oak. Inside the barrel is slightly toasted. For the first filling of the wooden barrel please proceed as follows:Fill the barrel with cold, clear water before use and let it rest for about 24 - 48 hours in filled condition.  After the tightness test, empty the barrel. An initial leakage of the barrel is nothing unusual and is no cause for concern - wood is a natural material and must first expand for storage/maturation of distillates.  Filling of the barrelImmediately after the tightness test you can fill the barrel with your favorite tipple through the glass funnel. The barrel must always be filled up to the bunghole. Keep some distillate for occasional refilling.  Storage of the caskIn order to enjoy your barrel for a long time, you should store it in a dark, cool and well ventilated (odourless) room. Optimal would be a high air humidity of 75% - 80%. Check the barrel and refill it if necessary. Also observe the tightness, any cracks that may occur and the tight fit of the bung. Due to micro-oxidation, the barrel is now in full swing. The ingredients of the oak wood are transferred into your distillate. It will develop different flavors at different intervals. The glass sample lifter allows you to take samples all the time. With the help of the alcoholmeter and the glass spindle cylinder you can check the alcohol content. When your personal distillate is mature is entirely up to you and your taste. NotesWood is a natural product. Small leaks are nothing unusual and may occur under certain circumstances. Therefore place the barrel in such a way that no consequential damage can occur. If the barrel leaks, try to knock the barrel hoops with extreme caution with a small hammer and chisel slightly towards the barrel belly. Evaporation, the so-called Angels' Share, occurs during the barrel maturing process. Always keep your barrel filled up to the bunghole, then the angels will only take a little bit from you.  After emptyingAfter emptying the barrel, it must be stored upright under the same conditions as during the maturing process. In this way, a barrel can survive an empty period of several weeks very well. After that the barrel must be filled again.The ideal storage temperature for these barrels is around 15 degrees - not over 20 degrees Celsius.  NoteWe wish you a lot of fun with filling, observing, tasting - whether alone or in convivial company with family or friends. However, we would like to point out that private aging is purely a hobby and cannot be compared with professional barrel ageing.
